why our cakes
Every ingredient we use is certified organic by the Soil Association, which means everything is responsibly sourced and free from chemical herbicides, pesticides and Genetically Modified Organisms. We're the only guys producing cakes and chocolate that are fully certified - if organic matters to you then so should our certification.
We use fresh passionfruits, lemons, limes and oranges. Everything is zested and pressed by hand ensuring that none of the fruit is wasted: fresh fruit provides a taste that essential oils or liquid extracts cannot replicate.
Why our chocolate
Our chocolate is single origin and hand made...by us!
We're also the only producers using maple syrup in our chocolate. Using a liquid sweetener poses a challenge when tempering but we think it is integral to our chocolate's taste so we have persevered and found a method that works.
After the chocolate is made we put it aside for a minimum of two weeks - older chocolate definitely tastes better.
